Tiny Writes
when I first started writing, poetry always came easiest to me when I was stressed, panicky, sad, or something else of that negative sort. recently, it is the exact opposite and I can't get words to flow onto the paper whenever my mind is too full. the happy days are easiest to write, which is great but it also means I have lost my #1 coping mechanism because it just doesn't work anymore. and I haven't written in quite a few days

This happens to me too, way too much. My advice is just that whenever anything, literally ANYTHING, pops into your head, remember it and write it down. It doesn't matter how ugly it is, just force some words down. Another option is using the YWP challenges or starting a piece of writing with someone else's line and then building off of that. The latter really helps me personally.
